01 Hard:
Made from raw milk produced in the Tokachi region and aged for over six months. This hard cheese has a mild flavor, making it easy to enjoy, even for those who may not usually like cheese.

03 Gouda:
Made from Tokachi raw milk and aged for over three months. It has a soft texture and a gentle, milky flavor that is beloved by all ages. With a mild aroma, it melts well when heated.

04 Cheddar:
Made from Tokachi raw milk and aged for over three months. This cheddar has a moist texture, a moderate tanginess, and a toasty flavor that pairs perfectly with beer or barley tea.

04 Cheddar KATSUO (Bonito):
A unique cheddar cheese with a Japanese twist, made by blending coarse-cut domestic bonito (katsuobushi) into the cheddar cheese. The balance of flavors is just right, with the rich taste of bonito spreading through the cheese. The texture of the bonito is intentionally left in, so the more you chew, the more umami (savoriness) you experience. This combination of the inosinic acid from the bonito and the amino acids from the cheese creates an “umami bomb” flavor explosion.

This cheese was developed to pair well with Japanese cuisine and sake, making it a Japan-inspired cheese designed with inbound tourism in mind. By preserving the texture of the bonito, you can enjoy the deep umami with every bite. The amount of bonito is carefully measured to ensure its flavor is prominent.
