While raclette cheese is typically aged for about 3 months in a maturation room, "Olive Tears" is made by marinating young raclette cheese, aged for just 1 month, in olive oil and allowing it to continue maturing in the jar. The flavors of herbs and spices infused in the oil gradually seep into the cheese, creating a luxurious and evolving taste experience.
