 Aizawa winery - Sachirera 2023 [Red]

・Grape Variety: 100% Yamasachi (grape variety) from Tokachi, Hokkaido

・Alcohol Content: 10.0% ABV

・Volume: 750ml

The Yamasachi grapes are cultivated without pesticides, with all processing done by hand. The grapes are destemmed manually, undergo a 14-day maceration, and are then pressed. After fermentation with wild yeast in stainless steel tanks, the wine is aged for five months in used barrels, then bottled unfiltered and unfined. It has aromas of wild raspberry, plum, violet, and a hint of spice.

A minimal amount of sulfur dioxide (SO₂) is added at bottling as an antioxidant.

Recommended Pairings: Pairs beautifully with beef, pork, venison, and stewed dishes.

Serving Temperature: Best enjoyed at 10–18°C.
