Japan's first organic-certified mustard, ORIKASA Organic Mustard, took six years to perfect. We began by selecting the best mustard seed varieties from Hokkaido and tested 13 varieties for flavor, spice, and rich umami flavor. We then narrowed it down to three varieties, creating our unique blend to achieve the perfect balance of taste. The mustard flowers bloom in July, filling the fields with a sweet fragrance, followed by tiny seeds (about 1mm in size). It takes approximately 2,000 seeds to make one jar of mustard. The ingredients are simple: organic mustard seeds (grown on our farm in Makubetsu, Hokkaido), organic potato vinegar (made from rare organic potatoes grown on our farm), and natural sea salt. No chemical additives or preservatives are used. The mustard contains about half the salt of typical imported mustard, allowing the flavor to enhance dishes without overpowering them. We recommend pairing it generously with Hokkaido-grown ingredients.

This plant-based mayo dip was created by potato farmers to pair perfectly with their potatoes. Made with organic Hokkaido soybeans and packed with rich umami flavor from Tokachi-grown organic mushrooms (1 whole "Tokachi Mash" mushroom is in each jar), it’s a delicious dip even for picky eaters who don’t normally enjoy vegetables.

This organic mini tomato juice took 10 years to develop. After trialing 60 varieties of mini tomatoes and gathering feedback from customers, we finally selected one variety with the perfect balance of sweetness and acidity. The tomatoes are grown without any irrigation to concentrate their flavors. Unlike other tomato juices, which raise sugar content by long heating times, we use a short, low-heat process to preserve the fresh, raw taste of mini tomatoes. Even those who dislike tomatoes or tomato juice will enjoy its natural flavor. Sommeliers describe it as having a "smooth texture, fresh acidity, and pleasant green notes, reminiscent of biting into a fresh mini tomato." Made only from fully ripened A-grade mini tomatoes, cultivated without chemical pesticides, fertilizers, or compost, this juice captures the essence of sustainable farming.
