Aizawa Farm grows grapes completely without pesticides and chemical fertilisers, which is unheard of in grape growing. The vineyards have been cleared from the mountain forests and the vineyards have been built from scratch on the grounds that they are free from pesticides.
After whole cluster MC, the wine is fermented with pressed wild yeasts, matured for five months in old oak barrels and bottled unfiltered and unfined. The wine is a wild and gentle wine with a reddish amber colour and berry aroma with spicy notes. A small amount of antioxidants are used at bottling.
